Kebab with cauliflower and focaccia

Step 1/5
- 10½ g fresh yeast
- 90 ml water
- 150 g flour
- ½ tsp sugar
- ½ tsp salt

In a large bowl, stir yeast in lukewarm water until dissolved. Add flour, sugar, and salt and knead for approx. 8 – 10 min. until a smooth dough forms. Place dough in a clean bowl and transfer to oven to rise. Select automatic program “cake / yeast dough” and set for 30 min. The dough should double in size.
Step 2/5
- 300 g ground beef (or lamb)
- 42½ g breadcrumbs
- 1½ tsp cilantro
- 30 g heavy cream
- ½ tsp Asian spice mix
- ½ tsp salt
- ½ tbsp olive oil
- pastry brush

In the meantime, in a large bowl, mix ground meat with breadcrumbs, cilantro, heavy cream, Asian spice mix, and salt. Form 8 equal-sized meat rolls from the mixture and brush with some olive oil. Cover with plastic wrap. Let rest for approx. 30 min. in the fridge.

When focaccia dough has risen, knead again for approx 3 – 4 min. Coat half of the baking sheet with olive oil and stretch the dough to cover the greased half completely. Transfer back to the oven to rise once more, selecting automatic program “cake / yeast dough” for 30 min.

- ¼ cauliflower head
- 15 g green onions
- 25 g shallots
- 10 g green chili peppers
- ½ tsp salt
- 1 tbsp olive oil

In the meantime, dice peeled tomatoes, separate florets from cauliflower, and finely chop green onions, shallots, and green chili pepper. Add to a large bowl and mix with salt and olive oil. Transfer vegetable mixture to baking dish and place meat rolls on top. Remove foccacia from oven, then preheat the automatic program M Chef Menu / Kebab / Cauliflower / Focaccia.

Place baking dish next to focaccia on baking sheet and brush focaccia with some oil. Bake on level 2 in preheated oven with automatic program for approx. 25 min. Drizzle with olive oil and serve. Enjoy!
