Veal tenderloin with vegetables

Step 1/4
- 125 g zucchini
- 50 g Enoki mushroom

Trim ends of zucchini, then cut lengthwise into eight equal pieces. Trim the ends of the mushrooms.
Step 2/4
- 450 g veal tenderloin
- 3½ slices Serrano ham
- salt
- pepper
- large frying pan
- aluminum foil
Season the veal tenderloin with salt and pepper and wrap in Serrano ham, then in aluminum foil, and fry in a large pan on all sides for approx. 2 min., or until ham starts to brown. Remove from heat and let cool.

- 150 g cherry tomatoes
- 30 ml olive oil
- 5 g thyme
- 5 g rosemary

- universal baking sheet with roasting rack
Preheat dialog oven. Remove the aluminum foil and place the veal tenderloin in the middle of the roasting rack set over universal baking sheet. Drape zucchini and mushrooms over it. Place tomatoes with stems around the tenderloin. Drizzle with olive oil and season with salt and pepper. Sprinkle with thyme and rosemary.

Transfer veal to preheated dialog oven on level 2 and run program. Serve slices of the tenderloin along with vegetables and enjoy!
