Beat eggs, milk and maple syrup until foamy.
Mix the flour, confectioner’s sugar, and baking powder and sift the mixture through a sieve into the liquid ingredients, while stirring.
Fry the dough in mini-rounds in a nonstick pan and serve with icing sugar or chocolate shavings.
The pancakes are also delicious with yogurt and cranberries, or chocolate sauce and apples.
Or serve them with honey and strawberries, or with crushed cookies!
