Step 1/4
- 10½ g fresh yeast
- 125 ml water
- 250 g flour
- ¾ tsp salt
- ¾ tsp sugar
- 10 g butter
- flour for dusting

Add yeast to lukewarm water and stir until dissolved. Add flour, salt, sugar, and butter and knead for approx. 4 – 5 min. until dough is smooth and elastic.

Transfer dough to a clean bowl and into the dialog oven to rise using the automatic program “cake / yeast dough” for 30 min. The dough should double in volume.

Briefly knead dough, then form into a 25-cm/10-in. loaf. Transfer to a cutting board and score loaf diagonally several times (approx. 1-cm/0.4-in. deep). Wrap bread and cutting board in plastic wrap, cover with a damp kitchen towel, and freeze for at least 12 hrs.

Remove loaf from freezer, unwrap, and transfer to a baking sheet. Brush well with water, transfer to oven, and run the automatic program “bread / white bread, frozen.” Bake the bread for approx. 60 min., or until golden brown. Transfer to a cooling rack to cool slightly before serving. Enjoy!
