Pre-heat oven to 220°C/425°F on convection. Peel and chop onions. Cut bell peppers into wide strips.
Spread onions and peppers out on a baking sheet and nestle in the sausages. Sprinkle with herbes de Provence, paprika, and oil and toss – making sure everything is coated evenly. Season with salt and pepper to taste.
Bake in the oven at 220°C/425°F for approx. 25 - 30 min., turning halfway through, until the sausages are golden brown. Enjoy!
