Plum-filled sweet rolls

- 25 ml milk
- 10 ml heavy cream
- 5 g butter
- 1⅜ g active dry yeast
- 66 g flour
- 6 g sugar
- ¼ eggs
- ¼ egg yolks
- ⅛ tbsp vanilla sugar
- ⅛ tsp salt

In a small saucepan, mix together milk, cream, and some of the butter over medium-low heat until combined. In the bowl of a stand mixer with dough hook attachment, combine milk mixture with dry yeast, flour, sugar, eggs, egg yolks, vanilla sugar, and salt. Mix on low speed until dough comes together, then knead for approx. 6 – 8 min. until a smooth, supple dough forms. Transfer dough to a mixing bowl, then to the dialog oven and set automatic program to “cake / yeast dough” for 15 min. Let rise until approx. doubled in size.

- 20 g plum marmelade

Meanwhile, add remaining butter to a large roasting pan set over low heat and melt. Remove dough from oven, knead briefly, and divide into 20 portions. Gently press each dough portion in the palm of your hand and fill with 1 tsp. of plum marmalade. Carefully roll dough into a ball to seal marmalade inside. Roll each ball in the melted butter and arrange side-by-side in the roasting pan.

Cover pan with a damp kitchen towel and leave to rest for approx. 20 min. Start the automatic program for "dessert / filled sweet rolls," preheat dialog oven and transfer rolls to oven on level 2 after resting time, and bake for 24 min.

Once rolls are done and slightly cooled, dust with powdered sugar and serve with vanilla sauce, if desired. Enjoy!
