Remove seeds from cardamom pods and transfer to a frying pan with black and white peppercorns, juniper berries, mustard seeds, and allspice. Toast for approx. 5 min, or until fragrant. Set aside to cool.
Add bay leaves to food processor with leaves from thyme sprigs, cane sugar, and cooled toasted spices. Blend until powdered and store in an airtight container in a dark, cool place. Enjoy!
