Cut off the two ends of the sweet potato. Cut a thin slice off on one side to form a base. Cut the sweet potato into thick slices, which you then cut into thick sticks.
Place the sticks into a resealable freezer bag and season with salt and pepper. Coat the sticks with olive oil. Transfer the sticks to a baking sheet covered with parchment paper. If you don't have a freezer bag at hand, the sticks can be seasoned and tossed with oil directly on the sheet. Spread the sticks out so that they don't touch one another. Place the sticks into an oven and bake at 200°C/400°F. for approx. 40 - 50 min.
To make the dip, add first crème fraîche and then lime juice to a small bowl. Season with salt and pepper. Add chili flakes and drizzle with olive oil.
Finely chop parsley and basil. Add them to the sauce. Mix well to combine.
Remove the fries from the oven, season with salt, and enjoy with the dipping sauce.
