    Technique:

    Making aioli isn’t so different from making mayonnaise; however, aioli incorporates garlic and calls for extra virgin olive oil instead of vegetable oil. Often times, aioli is also made without egg yolks, but their addition helps the garlic and olive oil to emulsify quicker.

    Uses:

    Aioli is widely used as a dipping sauce for vegetables, roasted potatoes, and shellfish. It has also become increasingly popular as a substitute for mayonnaise.
