"Alinazik kebab, or simply alinazik,is a home-style Turkish dish which is a specialty of the Gaziantep province of Turkey. It is made from smoked and spiced eggplant, grilled and then pureed, topped with cubes of sauteed lamb, previously seasoned and marinated, or with minced lamb. It is usually served with rice pilaf or yogurt with garlic, grilled vegetables, and melted butter."

    First of all, cut the eggplants a few times with the tip of a knife and grill them in the oven or on a cast iron pan.

    While the eggplants are cooking, chop onion and add it to the minced lamb. Add salt and pepper and 2 tbsp of chopped parsley. Mix them and put it in the fridge for at least 30 minutes.
