Transfer pumpkin halfs to a baking sheet, and roast in the oven at 180°C/350°F for approx. 40 min., or until fork-tender. Set aside to cool.

When pumpkin is cool enough to handle, scoop out flesh and add to a large bowl or food processor. Purée with a hand blender or in a food processor until smooth. Transfer to an airtight container and refrigerate for up to 2 weeks.
