In spring, one can only hope the summer brings with it heat and rays of sunshine aplenty, but by the time August rolls around, some of us are ready for the cool, brisk fall to sweep in—well okay, endless-summer-hopefuls, I may just be speaking for myself...

Poised to wave goodbye to afternoons spent soaking up the sun (with a glass that's sweating nearly more than we are), these 7 cocktails will have you wishing for an Indian summer instead.

With a dewy pink hue and tart bite, the paloma (Spanish for "dove") might just be Mexico's most beloved cocktail. Ours is served on the rocks and mixes fresh lime and grapefruit juice with tequila and grapefruit soda. Find a ripe and sweet, ruby red grapefruit for the juice and garnish, and sip the evening away in summer splendor.

A classic British liquor first produced in 1823, Pimm's is a tawny-colored, gin-based liquor with a subtle spice and citrus tang to it. Mix up your very own Pimm's bowl, with cucumbers, oranges, and lemon, and practice your British accent with friends. Oh, the improvements you will make.

Margaritas have to be one of the best summer drinks to beat the heat. On the rocks or frozen and blended, our version with red currants is a winner in both look and taste. A salt-lined rim adds an extra touch, but you can try it with sugar as well for a sweeter flavor.

Best in a big batch to share with friends and family, a Spanish sangria is usually equal parts refreshing drink and healthy snack (right?). Loaded with chopped apples, oranges, lemons, and peaches, the fruit lends its own and also takes on flavor from the red wine, cinnamon, and liquors to create a beautiful, mutually beneficial, flavor sharing ecosystem (say that three times fast!)

We'd even try the ice cubes on their own as little Aperol popsicles, but hey, that's just us…

For a floral take on the gin and tonic, look no further. The elderflower tonic highlights the juniper notes in the gin and a touch of lemon and mint add the final flourish to an easy-to-make, even-easier-to-drink, summer cocktail.
