Knowing how to make creamy mashed sweet potatoes is one of the basics in cooking the American style. Sweet potatoes are used in a lot of dishes and this mashed sweet potatoes is a perfect side dish for large family dinners or a thanksgiving dinner. With the twist of the lime it is fresh and modern and can be served for many occasions.
Halve the sweet potatoes and brush them with the honey. Sprinkle with the zest of the lime. Season the sweet potatoes with salt and pepper. Place them flat side down on a lined baking tray.
Cut the head of fresh garlic into slices and place them on the baking tray in between the sweet potatoes. Season with salt and pepper again. Drizzle generously with olive oil. Place in the oven at 180°C / 350°F for approx. 45 - 55 min.
Remove from the oven. Remove the skins from the sweet potatoes. Press each sweet potato through the potato masher into a large bowl. Lightly stir the mashed sweet potatoes. Season with salt and pepper. Add some olive oil. Halve the lime and juice half the lime into the puree. Lightly stir again. Enjoy as a creamy side dish.
