Brioche is historically French and the French know how to do pastry. This brioche is fluffy and soft. Serve it with some fresh butter and a nice jam or salt and your guests will be impressed by your knowledge of French cuisine. It's a crowd-pleaser!
Add the flour and the salt to the standing mixer. Mix well to combine. Add the eggs and egg yolks and mix well to combine.
Warm up the milk in a small saucepan. Add the sugar and fresh yeast. Whisk to combine. If combined, add the mix to the flour mixture. Mix well to combine.
Add the butter to the flour mixture and mix well to combine.
Lightly flour dough and work surface. Knead dough into a ball. Lightly flour a bowl and place the dough into the bowl. Cover with a kitchen towel and set aside to rise for approx. 1 hour.
Lightly flour work surface again and knead again the dough. Roll into a log. Grease baking dish with butter and add dough. Cover and set aside for approx. 30 min.
Transfer to the preheated oven at 180°C / 350°F and bake for approx. 20 min. Remove from the oven. Mix the egg yolk with the milk. Brush the bread with the mixture. Return to oven for approx. 15 - 20 min. Bake until the bread is golden brown.
