A fruity red wine with a light tannic presence is the ideal accompaniment here, bringing out the savory flavors of the dish.
Add rice, water and a pinch of salt to a saucepan. Bring to a simmer, reduce heat and allow to cook for approx. 10 – 15 min. until done. If necessary, drain excess water.
Meanwhile, cut beef into thin strips. Cut red onion and green onion into thin slices.
Add red onion, soy sauce, mirin, oyster sauce, sake, and sugar to a saucepan. Bring to a simmer over medium-high heat and continue to cook for approx. 2 – 3 min.
Then, add beef strips to saucepan and stir to cover with sauce.
Turn off heat, cover with aluminum foil, and allow to stew until meat is tender, approx. 3 – 4 min.
Remove aluminum foil and garnish with green onions. Serve over rice.
