Slice ginger. In a cocktail shaker, add ginger sliced and vigorously crush with a muddler. Add honey, lime juice, simple syrup, and golden rum and stir thoroughly, until the honey dissolves.
Add ice cubes and shake vigorously. Strain into a serving glass filled with fresh ice cubes. Top with ginger ale and serve with lime zest, lime wedges, and ginger slices as garnish.
