Crunchy, with a delicious hint of caramel and incredibly versatile - Florentines or Florentine biscuits are a popular Christmas cookie, but also a great sweet treat all year round. Our recipe is a basic version, which you can adapt to suit your taste... For example, replace some of the sliced almonds with slivered ones, sliced hazelnuts, peanuts or pine nuts. Many people also swear by candied fruit such as candied orange peel or lemon peel, or dried apricots, cranberries and dried cherries. To finish off our Florentines, we dip the cookies in chocolate. You can choose to dip, coat or decorate them in dark, milk or white chocolate or, like us, in a colorful mixture."

    Preheat the oven to 160°C/320°F. Zest half of each of the orange and lemon. Melt the butter in a small saucepan over a low heat. Add the honey and sugar and stir to combine. Add the orange and lemon zest and a pinch of salt. Set aside.

    Meanwhile, melt the chocolate in a double boiler or carefully in the microwave. When the Florentines are still warm, use a round cookie cutter or spoon to shape them. Dip the corners and cookie base in melted chocolate as desired and sprinkle with some flaky sea salt.
