Step 1/4

Mix flour, sugar, and salt in a large mixing bowl. Cut butter into cubes, and work into flour mixture until large crumbs form. Add water a little at a time, and continue to mix until a smooth dough forms. Wrap dough tightly in plastic wrap and refrigerate for at least 2 hrs.

Meanwhile, peel apples, core, and thinly slice. Transfer to a saucepan with lemon juice, cinnamon, and ground ginger and cook over medium-low heat for approx. 5 min., until slightly softened. Remove from heat and set aside to cool.

Divide apple filling between half of the dough circles, place the remaining circles on top, and press around the edges with a fork to seal. Transfer to prepared baking sheet.
