Classic hot chocolate with whipped cream
The creaminess and deep flavor of chocolate will pair perfectly with the fresh and spiced notes of these hearty, crisp pies.
Mix flour, sugar, and salt in a large mixing bowl. Cut butter into cubes, and work into flour mixture until large crumbs form. Add water a little at a time, and continue to mix until a smooth dough forms. Wrap dough tightly in plastic wrap and refrigerate for at least 2 hrs.
Meanwhile, peel apples, core, and thinly slice. Transfer to a saucepan with lemon juice, cinnamon, and ground ginger and cook over medium-low heat for approx. 5 min., until slightly softened. Remove from heat and set aside to cool.
Preheat oven to 200°C/400°F and line a baking sheet with parchment paper. Lightly flour a work surface, unwrap dough, and dust with flour to prevent sticking. Roll out dough (approx. 0.5-cm/0.2-in. thick), and cut out circles using a cookie cutter or a knife. Divide apple filling between half of the dough circles, place the remaining circles on top, and press around the edges with a fork to seal. Transfer to prepared baking sheet.
Beat the egg and brush over hand pies. Sprinkle with sugar. Transfer to oven and bake at 200°C/400°F for approx. 20 min, until golden brown. Enjoy!
